Pelamos y cortamos el chorizo colorado en rodajas finas y luego a la mitad. Colocamos en la misma olla que utilizamos para rehogar las verduras dorar la panceta, retiramos. En el fondo que dejó la panceta doramos el chorizo colorado.


- Cortamos ambas carnes en cubos y en el fondo que dejó la panceta y el chorizo colorado sellamos las carnes por separado. Una vez sellada las carnes. Retiramos el fondo de cocción que dejó el sellado de las carnes. Colocamos las verduras rehogadas, las carnes, el chorizo y la panceta.



- Agregamos el tomate triturado y dejamos cocinar a fuego bajo hasta que las carnes estén tiernas.


- Pelamos y cortamos las papas en cubos. Pelamos y cortamos las zanahorias en cuartos (a lo largo) y luego en fetas finas. Lavamos las lentejas y dejamos en remojo mientras se cocina la carne. Cuando esta esté tierna agregamos las lentejas y las zanahorias. En caso de ser poco el tomate, agregamos agua hirviendo con uno o dos cubitos de verduras. Condimentamos a gusto y cocinamos por 30' aproximadamente. Agregamos las papas y cuando estén apenas cocidas apagamos el fuego y dejamos la olla tapada.
