  1. Preparamos la masa madre la noche anterior: mezclamos en un bol la harina, el agua y la levadura y dejamos fermentar un mínimo de 12 horas en un lugar cálido (despensa por ejemplo)
  2. Al día siguiente, mezclamos todos los ingredientes en un bol, la masa será muy pegajosa y blanda. Dejaremos reposar entre 10 y 15 minutos después de mezclar.
  3. Amasar a pliegues (foto) con la mano mojada para que no se pegue tanto. Amasar a pliegues es coger un lateral de la masa, estirarla hacia arriba y voltearla. Así con los 4 lados de la masa.
  4. Después del primer amasado a pliegues, dejamos reposar 20 minutos y repetimos el amasado. Este proceso se realizará entre 4 y 5 veces, hasta que la masa tenga algo de cuerpo y esté más fina.
  5. Fermentar entre 3 y 3 horas y 30 minutos.
  6. Con una taza de café mojadas o las manos bastante mojadas vamos a coger un poco de masa, tamaño de la palma y a colocar rápidamente en una tabla o mesa con bastante harina para que no se pegue. Este proceso hay que hacerlo de forma rápida ya que la masa se pega mucho y es difícil darle forma. Cuando tengamos los molletes en la mesa enharinada, echamos un poco de harina por encima y damos forma circular con cuidado.
  7. Fermentar 1 hora y 30 minutos y después transferir con mucho cuidado a una hoja de papel de hornear. También se puede colocar directamente la masa en la hoja, y después de fermentar, eliminar la harina sobrante. Precalentar el horno a 250° C, calor arriba y abajo sin ventilador ni vapor. Cocer entre 8-10 minutos.
  8. Dejar enfriar en una rejilla y listos para comer!
